Diana Murphy (39) mum of one and co-founder of the award-winning gluten free directory and community hub, has teamed up with River Cottage to offer the chance to win a gluten free cookery day at the famous Devon farm managed by tv chef Hugh Fearnley-Whittingstall.

The offer has come after Diana, who has been gluten free for six years, was invited to attend a gluten free cookery course at River Cottage.

She said: “I’ve always wanted to visit the River Cottage HQ, having seen it on television many times. I love learning, experimenting, trying out new things and using unusual ingredients. My aim, is always to prepare something for my family that’s not only delicious but also healthy – and preferably quick to make.”

Guests who attend courses are met and transported by tractor and then taken to the farm and cookery school to meet course director Naomi Devlin – herself a coeliac and a qualified nutritionist. 

Diana, who lives in Malmesbury, Wiltshire,  said “We began the day with Naomi explaining the principles and health benefits of fermented food and showed us how to make a sourdough starter for our bread. Next, we made some delicious chocolate chip cookies. We learnt about the various gluten free flours, the different fats you can use for baking, how to make dairy free cookies and how to reduce the sugar content focusing on healthy eating and good nutrition. 

“At lunchtime we all set down to enjoy a delicious two course meal prepared by talented chefs at River Cottage, using home-grown seasonal ingredients. This was a lovely time to chat and get to know our fellow cooks.In the afternoon we learnt all about pastry making and created some lovely gluten free bakewell tarts! Finally, we baked our bread and prepared some wholesome sourdough crackers – they were a great snack on the way home!

Diana added: “The whole experience has left me more confident and full of excitement. The course is not about following a recipe, but about learning the principals of flour blending and what is the role of the various ingredients in gluten free cooking and baking. I recommend it to anyone wanting to learn about healthy gluten free cooking.”
